Whatcom County’s second MIX restaurant is now open at 2925 Newmarket Street in the thriving Barkley Village neighborhood of Bellingham. MIX offers fresh, made-to-order salads, hot broth bowls, and innovative MIXwiches featuring fresh ingredients wrapped up in a warm flatbread.
The fast-casual restaurant adds a unique dining option to the area, with locally sourced ingredients and a menu that showcases cuisines from around the world. Dine-in and carryout options make it convenient for local office workers to grab a quick, energizing lunch, or for families in the area to squeeze a satisfying, nutritious meal into their busy schedule.
“MIX was born out of a busy mom’s need for a quick, healthy meal at the end of a long day,” said Helen Neville, owner of MIX. “I wanted to create a restaurant with food that I’d feed to my own family—nutritious, tasty, and made with great ingredients. That’s what we offer—truly delicious food that absolutely anyone can feel good about eating.”
The menu’s salad selection features items like the Whatcom Cobb, topped with blue cheese from Twin Sisters Creamery in Ferndale, and the Falafel Dream, with traditionally made falafel balls from Seattle’s Dreamland Foods. Guests are encouraged to create their own favorite bowl from dozens of ingredient choices. Any salad can be wrapped in a warm flatbread to become a MIXwich, and the soups are made with bases provided by Bellingham’s Cauldron Broths. A kids’ menu and innovative, yet simple desserts round out the selection, ensuring that there’s an option for every palate. Seasonally rotating options keep the offering fresh and in tune with the region’s bounty.
“We’ve been working on this store for months and are thrilled to finally open our doors to the Barkley Village community,” continued Neville. “We are so lucky to live in a place where fresh ingredients grow abundantly, making it easy for us to support our farmer neighbors while creating interesting new seasonal dishes.”
MIX’s dedication to supporting the local community extends beyond the partnerships with Western Washington food producers and farmers. The interior of the restaurant features realistic, larger-than-life vegetables painted by local artist Shawn “Pickles” Cass.
So far, the company has hired 22 local employees to meet the staffing demands for the new location as well as the original MIX at 215 West Holly Street in downtown Bellingham. MIX in Barkley Village is open every day from 11:00 am to 8:00 pm. MIX on Holly St. in Bellingham is open from 11:00 a.m. to 7:00 p.m. Monday through Saturday.
